Chicken or Steak with Balsamic BBQ Sauce:

Ingredients

For the BBQ sauce: 1 cup balsamic vinegar, 3/4 cup ketchup, 1/3 cup brown sugar, 1 garlic clove (minced), I tbsp Worcestershire sauce, 1 tbsp Dijon mustard, 1/2 tsp salt, 1/2 tsp freshly ground black pepper
For chicken or steak: 4 pieces chicken or 4 pieces strip steak, salt, and freshly ground pepper

For the BBQ sauce

Well combine all the ingredients in a small saucepan and stir until smooth. Simmer over medium heat until reduced by 1/3, about 15-20 mins.

For chicken or steak

1. Preheat a gas or charcoal grill. Season the meat with salt and pepper. Lightly coat with some BBQ sauce using a pastry brush. Place the meat on the grill.
Tips: The remaining sauce should be placed over low heat to allow gently simmer while the meat is cooked.
2. Cook the chicken about 8 mins each side; cook the steak starting at about 4 mins per side until a meat thermometer reads the desired temp, 120 degrees F for medium-rare, 135 degrees F for medium (about 6 mins per side), 155 degrees F for well done (about 9 mins per side).
Tips: The chicken alternatively can be baked in the oven. Place the chicken skin side up and bake over 375 degrees F for 25 mins. Then remove and spoon the sauce all over the top of the chicken. Re-bake for another 15 mins.
3. Continually brush the meat with sauce every few mins. Remove the cooked meat from the grill and let rest for at least 5 mins. Serve with the heated sauce alongside.
